I love simple, delicious and fast cooking recipes. If I have to choose between a beef bourguignon and a salad for my meal I would choose the second option with no regrets, even though I’m not a vegetarian🙂
The recipe I choose to present you today is a simple dish for which you need less than 30 minutes for prep+cooking time. We’ve had it during the weekend, and it was kind of late lunch/ early dinner meal.
So here is what you need for 2 serves :
- 1 sweet potato (medium size)
- 10-12 small prawns/person or 4-5 big prawns/ person (I used the small ones)
- 1 /2 tablespoons sour cream (until it reaches the consistency and the taste you are looking for)
- salt and pepper
- fresh/pickled veggies for decoration
Boil for about 15-20 minutes the sweet potato, once you peel it and slice it in big cubes. In the meantime, peel and devein the prawns (mines were bought precooked, so I could skip the prawn cooking step). Once the sweet potato is cooked remove it from the water and mash it (I used a fork to mash mine, as it was quite soft), then add the sour cream and season it with salt and paper. To spice it a little bit more and make it loose some of the natural sweetness I added as well some ginger powder.
I used cherry tomatoes and pickles to add a bit of more color on the plate.
